Ethiopian Sidamo

Coffee production in Ethiopia is a longstanding tradition which dates back dozens of centuries. Ethiopia is where Coffea arabica, the coffee plant, originates. Ethiopia itself accounts for around 3% of the global coffee market. Coffee is important to the economy of Ethiopia; around 60% of foreign income comes from coffee, with an estimated 15 million of the population relying on some aspect of coffee production for their livelihood.

Sidamo. Equivalent to quality. It is very likely that in and around this region is where coffee had its origins. Sidamo coffee is well-balanced with cupping notes exhibiting berries and citrus with complex acidity. The coffee hails from the province of Sidamo in the Ethiopian highlands at elevations from 1,500 up to 2,200 meters above sea level. At these elevations the coffee beans can be qualified as “Strictly High Grown” (SHG). Here the Ethiopian coffees grow more slowly and therefore have more time to absorb nutrients and develop more flavors based on the local climate and soil conditions. The most distinctive flavour notes found in all Sidamo coffees are lemon and citrus with bright crisp acidity.

India Cherry Robusta

Coffee growing started with an Indian Muslim saint, who, while returning from a pilgrimage to Mecca, smuggled seven coffee beans (by hiding them in his beard) from Yemen to India. Initially, Arabica was popular. However, as result of serious infestation caused to this species by coffee rust, an alternative robust species of coffee, appropriately named as robusta and another hybrid between liberica and Arabica, a rust-tolerant hybrid variety of Arabica tree became popular. This is the most common variety of coffee that is grown in the country with Karnataka alone accounting for 70% of production of this variety.

Some Indian varieties include Arabica Cherry, Robusta Cherry, Arabica Plantation, and Robusta Parchment.

Indian coffee has a good reputation in Europe for its less acidic and sweetness of character and thus widely used in Espresso Coffee, though Americans prefer African and South American coffee, which is a more acidic and brighter variety.

Colombian Supremo

Colombia Supremo refers to the largest size of beans from Colombia. Supremo is a screen size of 17 or 18 and is slightly larger than the Excelso distinction. Supremo and Excelso beans may be harvested from the same tree at the same time and later sorted by size, though that’s not the only difference between them.

The fragrance is of caramel, fruity notes, and chocolate. Secondly, the aroma is of citrus notes and honey with residual lemon. The acidity is bright and medium-high. Costa Rica Tarrazú

Coffee production has played a key role in Costa Rica’s history and continues to be important to the country’s economy. The largest growing areas are in the provinces of San José, Alajuela, Heredia, Puntarenas, and Cartago. The coffee is exported to other countries in the world and is also exported to cities in Costa Rica.

As a small country, Costa Rica now provides under 1% of the world’s coffee production.
Costa Rica is the only country in the world where it is actually illegal to produce any type of coffee other than 100% Arabica—the highest quality of coffee beans. A law was passed in 1989 prohibiting the planting of low-quality beans, encouraging Costa Rican farmers to pursue true excellence.
Arabica beans are a specific variety of beans that is more difficult to grow than other, hardier stocks. The result when the beans mature though is rich, full-bodied flavors leading to premium blends.
Arabica coffee beans come from delicate plants that need specific climate conditions to thrive, including high altitude and mild temperatures. In Costa Rica, the mountainous regions and warm temperatures provide the perfect environment for growing the highest quality Arabica beans.
Costa Rican coffee beans are considered among the best in the world. Tarrazú is thought to produce the most desirable coffee beans in Costa Rica, a coffee with high fine acidity, very good body and very good aroma.

Guatemala

Guatemala was Central America’s top producer of coffee for most of the 20th and the beginning of the 21st century,

Guatemala coffee is considered one of the most aromatic coffees in the world. Volcan de Oro, an arabica This variety that is named like this because it is grown on the slopes of volcanoes, at high altitude. Its grains, giant and characteristic bluish tone, give off a rich fruity taste that persists in the mouth.

Its cultivation on this volcanic terrain at more than 1500 meters of altitude, gives it extraordinary nuances: balanced acidity, intense aroma and excellent body. In short, Volcán de Oro is a coffee of the highest quality.
